Choco-Croissants (BBD #61)

Hier mein Beitrag zu Zorras Bread-Baking-Day, der diesmal von Anusha betreut wird. Ich bin etwas spät dran, was daran lag, daß mein eigentlich als sicher geglaubtes Rezept bei der Hitze der vergangenene Woche schief ging.
Ich hatte mich entschlossen, Choco-Croissants zu backen und meine für das Tourieren verwendete Standardbutter quittierte die Hitze damit, sofort beim Tourieren fast flüssig zu werden, so daß die Teigschichten alle rissen. Der zweite Versuch ließ sich erst gestern hinbekommen, als es etwas kühler war. Ich hoffe mal, daß mein Beitrag noch angenommen wird. Das Rezept basiert auf meinem gut funktionierenden Basis-Rezept für Croissants, hier allerdings ohne Sauerteig.

Menge für 12-14 Choco-Croissants

Poolish-Vorteig TA200:
150 g Weizenmehl 550
150 g Wasser
0,5 g Frischhefe
Gut vermischen und 12 Stunden reifen lassen.

Hauptteig:
Poolish
200 g Weizenmehl 550
200 g Dinkelmehl 630
190 g kalte Milch
10 g Frischhefe
25 g Zucker
40 g Butter
12 g Salz

300 g Butter für die Butterplatte

Für den Hauptteig den Poolish, die Milch und die Mehle vermischen, bis keine Mehlnester mehr da sind. 20 Minuten ruhen lassen. Die Butterplatte aus 300 g Butter zwischen zwei Frischhaltefolien ausrollen und ebenfalls noch mal kalt stellen.
Die restlichen Zutaten zum Teig geben und zu einem glatten und elastischen Teig auskneten (ca. 4-5 Minuten). Für 60 Minuten kalt stellen.

Nun den Teig auf der bemehlten Arbeitsfläche etwa doppelt so groß ausrollen, wie die Butterplatte. Die Butterplatte auflegen und den Teig zuklappen. Die Ränder gut andrücken und etwas gerade abstechen. Die erste einfache Tour geben. Das Tourieren habe ich hier gezeigt. Den Teig nochmals ausrollen und sofort die zweite einfache Tour geben, dies geht wegen der durch das Dinkelmehl erreichten höheren Elastizität des Teiges sehr gut.
Den Teig nun für 60 Minuten abgedeckt in den Kühlschrank zum Entspannen stellen. Sodann ausrollen und die dritte einfache Tour geben und den Teig nun für weitere 60 Minuten im Kühlschrank entspannen lassen.
Den Teig auf der bemehlten Arbeitsfläche länglich ausrollen bis auf etwa 5-7 mm Dicke. Mit einem langen Messer oder einer scharfen Teigkarte 12 – 14 gleich große Rechtecke ausstechen.

Auf die einzelnen Rechtecke Choco-Pellets aus Zartbitterschokolade auflegen und die Rechtecke straff zu Zylindern aufrollen. Auf ein Blech mit dem Schluß nach unten legen und mit Eistreiche bestreichen. 90 Minuten bei 23-24° gehen lassen und nochmals satt mit Eistreiche bestreichen.

Den Ofen auf 210° aufheizen und nach Ende der Gehzeit einschießen. Schwaden und den Dampf nach 5-6 Minuten ablassen. Die Croissants braun ausbacken (insgesamt ca. 20-22 Minuten Backzeit bei 210°).

Due to the tropical heat of the last week I ran into trouble while making this croissants. My standard-butter melted at once while rolling out the dough in my 26-28° hot kitchen, which lead to a totally insufficient sheeting of the dough. So I had to do the recipe again yesterday, after the weather cooled down some degrees. I also used a different, more firm butter from Normandy/France „La Belle d‘ Andaine“, which from now on I will always use in summer.
I hope that I am not too late for the round-up of BBD #61.

Poolish:
150 grams of bread flour
150 grams of water
0,5 grams of fresh yeast
Mix properly and let mature for 12 hours.

Main dough:
Poolish
200 grams of bread flour
200 grams of white spelt flour
190 grams of cold milk
10 grams of fresh yeast
25 grams of sugar
40 grams of butter
12 grams of salt

300 grams of Butter for the lamination (roll flat to a rectangle of 15 x 30 cm between two plastic films)

For the main dough mix the poolish, the flours and the milk until dissolved and let rest for 20 minutes. Add the yeast, the sugar, the butter and the salt and mix until medium gluten development (4-5 minutes). Put the dough into the fridge for 60 minutes.
Roll out the dough slightly more than 30 x 30 cm and put the butter-layer on one side of the dough. Fold the other side of the dough over and press the edges together firmly. I showed some pics about the lamination of doughs here.
For the first „Tour“ fold 1/3 of the doug in ad fold the other siide over the first. It should look like this:

If the dough hasn’t got to warm and is extensible enough (the spelt flour contributes greatly to the extensibility) you can immediately give the second tour. Roll out the dough to a rectangle and fold it again like described above. Let it then rest for 60 Minutes in the fridge.
Roll out the dough for the third time and fold in as described above. This gives the dough 27 layers, which is enough for this type of viennoiserie.
Let it again rest in the fridge for 60 Minutes. Roll it out to a rectangle on the well-floured bench until 5-7 mm thick. Divide in 12-14 small rectangles as shown above. Put 6-8 dark-chocolate-pellets on each of the rectangle. Roll in each rectangle to a cylinder as shown above.
Put the cylinders with the seam down on baking sheets. Brush with egg wash.
Let the croissants rise for 90 Minutes at 23-24° C, then brush again with egg wash. Preheat the oven to 210°C.
Bake for 5 Minutes with steam, release the steam and bake for a further 15-17 Minutes until the Croissants are finished. Take care not to let them get too brown.
